Jean Farrar, who has lectured on nutrition
at Eisenhower Hospital in Rancho Mirage, California, and
the College of the Desert in Palm Desert, California, recently
shared some of her excellent recipes with us.
You won't notice that these Soysicles
are healthy, and your kids won't either. They'll be lining
up to get these frosty, creamy chocolate treats. If you're
concerned about sugar, use carob instead of chocolate.
1 cup (250 ml) chocolate or carob soy milk
3 tablespoons (45 ml) cocoa or carob powder
1 12-ounce (360 g) package plain extra firm tofu
In a food processor or blender, combine ingredients and
process one to two minutes, until smooth. Pour into popsicle
mold, inserts sticks, and freeze until solid. Makes 3 cups
(750 ml) of mix.
